Sturgeon production in North Carolina is conducted in RAS systems at two locations in the state. We are currently in the early stages of this industry with sales and production numbers not yet available. Products to be marketed are focused on the valuable eggs of the female called “caviar”. Sales of this product are valued per ounce. Meat products are also considered valuable, with smoked meat being one of the value added products in demand.
