The North Carolina Crawfish industry continues to provide opportunities for area producers. Production has been stable at about 50 water acres, producing about 15,000 lbs with an annual farm gate value of over $70,000. All production is in ponds with the majority of these crustaceans being raised in traditional, shallow ponds planted in forage crops. More recently, some producers have converted freshwater prawn and catfish ponds to produce crawfish using the “deep pond” method (see below).
